    麻婆豆腐

    用油把豆腐煎成脆的金黄色,取出。(这一步是我创造的, 不喜欢请跳过。)

    用油炒辣豆瓣酱(或者豆瓣酱+干红辣酱)、花椒粉、姜末、蒜末、盐,再加入肉末。

    放入豆腐,翻翻。

    倒入事先配好的芡汁:酱油、料酒,糖、味精和淀粉。收汁儿。

    ——正宗的似乎是用牛肉末,俺都用猪肉,一样好吃!
